Chef's Pantry Gift Set

Ancho: Ancho is the sweetest of the dried chiles. It has a mild fruity, earthy flavor. They are fairly mild, rated 3 on the heat scale (10 being the hottest). Ancho is used to add flavor, heat, and color to sauces and moles. Ancho chile is produced in Mexico’s central region.

Chipotle: The Chipotle chile is a dried smoked red jalapeno. Used in a variety of Mexican dishes and because of it’s tangy brightness, it is often powdered over vegetables or added to stews and soups. Vegetarians can use Chipotle as a substitute for ham bones in stews, casseroles and soups. Chipotle has a heat level of 4. (10 being the hottest)

Guajillo: The flavor of the Guajillo is slightly fruity with a strong, berry under taste. Guajillo flavors dishes easily, a little goes a long way. Guajillo is traditionally used in Mexican and Southwestern cuisine, from sauces, salsas, soups, and stews. A mild chile on the heat scale, it is rated a 5. (10 being the hottest)

New Mexico Chile: New Mexico Chile Powder is very easy to use. Use in stir fry, or sprinkled over poultry or fish before baking or grilling. Spritzing popped popcorn with melted butter and then tossing with a bit of chile powder is a great and different snack. New Mexico chile is mildly hot and ranges from 1 to 2 on the heat scale (10 being the hottest)


Apple Pie Seasoning: A custom, balanced blend of cinnamon, nutmeg and cardamom gives our seasoning a delicate flavor to help enhance your apple baked dishes. Apple crisps, strudel, cakes, turnovers, cobblers, and of course, pies taste better as our blend helps distinguish the taste of the apples for a better baked dish.

Pumpkin Pie Seasoning: Our seasoning is made up of select cinnamon, nutmeg, allspice, ginger and ground cloves. This blended recipe allows you to make the perfect pie every time. Substitute our seasoning in pumpkin recipes which require cinnamon or nutmeg for a more complex and flavorful result.

Blackening Seasoning: A custom blend of Ancho chile, paprika, oregano, Chipotle chile, Pasilla Negro as well as other herbs and spices is great rubbed on fish, chicken, steak and other meats. Made without salt or sugar, our blackening seasoning is ideal for marinating, you can salt to your liking just before you grill.

Steak Seasoning: A unique blend of basil, Kosher Salt, garlic, onion, oregano, thyme and Butcher Black Pepper. Designed for use on steaks and burgers, but also try it on chicken and pork.

Lemon Pepper Seasoning: A balanced blend of lemon peel granules, 
coarse black pepper, salt and other spices makes our seasoning perfect for a wide array of dishes. Great with poultry, fish, pork and beef whether it’s grilled, baked, broiled or fried.

Jerk Seasoning: Sea Salt, a dash of allspice, crushed red pepper, paprika, thyme and other spices make our Jamaican Seasoning truly special. Rub Jerk Seasoning directly onto the meat before you grill or it can be combined with liquid to create a tasty marinade.

Curry Madras: Blend Curry Madras with some melted butter and brush on fish before grilling or broiling. Curry Madras is also good on roasted potatoes. Delicious with lamb, beef, chicken, and vegetables. Try a little in scrambled eggs and tomato dishes.

Herbs de Provence: Our Herbs de Provence is a blend of various herbs, basil, thyme, marjoram, rosemary, savory and lavender leaves. Use for roasts, game, braised meat and root vegetables. Use in stews with baked tomatoes or roast chicken, apply before grilling or baking to kabobs, chicken and white fish.

Chinese 5 Spice: Originating in China, this spice mix combines ground cinnamon, fennel, star anise, cloves, and Szechwan pepper. It is often used in meat marinades and as a spice in barbequing. Mixed with ground salt, it makes a dip for deep-fried Chinese foods. Sprinkle onto spare ribs, roast pork and duck for an authentic Chinese flavor. 
Prime Rib Seasoning: Our Prime Rib Seasoning is a balanced blend of salt, pepper, garlic, onion and rosemary and other herbs. Our seasoning is not only great on Prime Rib but other roasts as well. Try it on poultry, fish, vegetables and salads to give them an added zest.


Sel Gris: Grey Sea Salt, Sel Gris is an all natural sea salt from Guerande in Brittany France. The taste of Grey Sea Salt, is a balance of the sea and its minerals with large grey crystals, and a moist texture. It is unprocessed and unrefined. Use Gray Sea Salt to finish a dish. Sprinkle onto vegetables, salads, fish and other meats.

Smoked Sea Salt: Smoked Sea Salt is used mostly as a finishing salt and can be added to rubs or seasoning blends. Great on grilled meat and vegetables, it provides a smooth smokey flavor. Smoked Sea Salt adds a unique flavor to a wide variety of dishes including salads, roasts, chicken and sandwiches. Try it in a Bloody Mary!

Sea Salt: Sea Salt contains less sodium and more trace elements than salt mined from the earth. Sea Salt is obtained by wind evaporation, naturally by the sun or artificially from water evaporation pans. 
Use in place of Rock Salt (Table Salt). Sea Salt is ideal used on the rim of mixed drinks.

Herbs & Spices

Chinese Cinnamon: Chinese Cinnamon is also known as Cassia. Similar to true cinnamon, “Ceylon”, it is more pungent and has a less delicate flavor. Used widely in the United States, Cassia Cinnamon enhances the taste of vegetables, fruits and is used to mellow the tartness of apple pie.

Mace: Mace has a flavor and aroma similar to nutmeg, however slightly more pungent. Mace lends a fragrant, warm spiciness to many baked goods and can be used in puddings as well as fish and meat dishes. Sprinkle on anything chocolate, fruits and whipped cream. Mace can always be used as a substitute for Nutmeg.

Black Tellicherry Peppercorns: Clean and aromatic in flavor, black peppercorns can be ground or added whole to just about any recipe. The Whole Black Tellcherry is a little larger than the Black as it is left on the vine longer before harvesting and allowed to develop a stronger pepper flavor. Roll beef or pork roasts in ground Tellicherry and garlic powder before roasting.

Pink Peppercorns: Pink Peppercorns have a delicate pepper flavor and impart a light rose color to food. A great spice to be used with that special salt. Use pink peppercorns in your favorite salad dressing or vinaigrette as well as crushing it and rolling pork or beef in it prior to roasting.

Basil: Basil has a sweet, herbal bouquet. Widely used in Italian cuisine it is often paired with tomatoes. The herb complements meat, vegetables, cheese, and egg dishes as well as salad dressings, cold pasta salads, grilled fish and roasted chicken. Try it in your next marinara sauce and you will see how our basil stands out above all others.

Thyme: Thyme has a subtle aroma and a slight mint flavor. Thyme blends well with other seasonings: marjoram, basil, oregano, sage, or rosemary. Seasoning blended with thyme goes well with poultry and stuffing and also can be used in fish sauces, chowders, and soups. Rub minced garlic and thyme over beef, pork, and lamb roasts.

Greek Oregano: Greek oregano is most commonly used in pizza and tomato sauces. It is also a great addition to beef, lamb and pork dishes. Drizzle it over grilled fish and poultry, use in salad dressings, in a sauce with melted butter and lemon juice as well as an addition to ground meat. It is great in herb breads, broiled vegetables and stews.

Summer Savory: Summer Savory has a peppery flavor and a clean pine aroma. Summer Savory, used as a garnish, enhances the flavor of heavy stews, soups and chowders. Rubbing summer savory into meat prior to cooking will enhance the flavor of any type of meat from beef to poultry.

Nutmeg: Nutmeg has a pungent aroma and sweet flavor. Nutmeg is an ideal baking spice for making fruit pies, cookies, muffins, cakes and sweet breads. Used as a topping it is often sprinkled over puddings, eggnog, whipped cream and custards. It can also be sprinkled lightly over chicken, veal and fish and used in sausages, soups and preserves.

Crushed Red Pepper: Red Pepper can be used in any dish where you would like a chile, peppery burst of flavor. Red Pepper can be added with onion, cheese, and bacon to beaten eggs for scrambled eggs or omelet. Try adding red pepper to barbecue steak sauce. Use it to marinate or baste steaks.

Vanilla Paste: Nielsen-Massey Pure Vanilla Bean Paste is a convenient replacement for vanilla beans in any recipe. Because it contains vanilla bean seeds, the paste adds an all-natural, gourmet appearance to foods. Use it for making traditional favorites such as ice cream, gelato and crème brulee, or to enhance whip cream, cakes an icings.

India Tree Sugars

Demerara is a large- grained sugar with a relatively low molasses content--hence its paler color and milder flavor. It makes an excellent table and topping sugar. Use on breakfast cereals and yogurt, in coffee and for glazing hams. Use to decorate cookies and add interest to apple crisp and bread pudding.


Dark Muscovado has a fine, moist texture, a high molasses content, and a strong lingering flavor that goes well with other rich flavors - as in gingerbread, coffee, chocolate cakes and fudge. Use in recipes calling for dark brown sugar.

Golden Baker’s is an excellent general purpose sugar with a delicate molasses flavor. Use it as a table sugar and in making perserves, as well as in any baking recipe calling for white granulated sugar. This sugar is wonderful with pralines or in a pecan pie.
