Lentils have a tiny lens-shaped pulse (the pulse is the dried seed of a legume, such as beans or peas), and they have been traditionally used as a meat substitute. They are the seeds of a small shrub and when harvested are then dried. The Green or Eston Lentil is a great choice to use to thicken soups or stews as they loose their shape when cooked for a long period. They can be combined with curry spices and served over a bed of rice.
