Lentils have a tiny lens shaped pulse (the pulse is the dried seed of legumes, such as beans or peas), they have been traditionally used as a meat substitute. They are the seeds of a small shrub and when harvested are then dried. Green Lentils have been the staple in many South Asian cultures. As with almost all lentils, Green Lentils cook quickly and are very nutritious which makes them a great choice for soups. Green Lentils can be chilled and used with salads or blended with couscous for use as a bed for poultry and seafood dishes.
