Southwestern Orzo is flavored pasta made up of a colorful blend of black bean, maize and red chile. The firm texture and mixture of subtle flavors makes it versatile enough to be used in different cooking applications. Used mostly as a substitute for rice, it can be toasted, used in Pilafs, soups, cold salads and by itself with butter. One pound yields 6-1/2 cups cooked.
